Hippy Cookies
This recipe is a "Guerilla Cookie" adaptation, a wonderful product from the 70s and created in the hip and liberal state capitol town of Madison, Wisconsin where I graduated from the university. The originals were practically the size of my hand and so filling and nutrious, that just one bite would "fill a person up the whole day." (See if you can connect this famous film quote with the movie!) This recipe is chock-a-block full of nutritious ingredients and contains a very healthy dose of fiber, protein, calcium and B12. I don't feel a bit guilty eating these cookies! Sometimes, I call them my lunch. As I recall, they were called "Guerilla" cookies after "Guerilla Warefare" and not after the mammal. Go figure... it was created in Madison, Wisconsin, afterall. They were sold in wonderful food co-ops originally run by hippies and mentored hippy wanna-bes.. How I miss that town, university and era!
